OUR APPROACH TO ALLERGEN MANAGEMENT

For catering providers, allergen management is more than just a legal requirement. It is a vital part of protecting people’s health, and particularly in school catering environments, the safety and welfare of children is crucial. With food allergies becoming increasingly common among school-aged children, catering teams must ensure that all meals are prepared safely and handled with care.

For both adults and children, even trace amounts of an allergen can trigger serious reactions. While fresh meat products themselves may not contain allergens, processed products such as sausages, burgers and meatballs can contain allergenic ingredients.

One of the biggest risks in food production is cross-contamination. To minimise this risk, we operate strict allergen control procedures throughout production.

To avoid cross-contamination between allergen-containing and allergen-free products, we carry out a full clean-down between batches. This extensive cleaning process includes:

  • Sanitising all equipment and production surfaces
  • Cleaning utensils and handling tools
  • Removing ingredient residues
  • Conducting hygiene checks before production resumes

These procedures are designed to help ensure products are manufactured safely for schools, caterers and consumers with dietary requirements.

Clear and accurate allergen information is equally important. Every product we supply comes with a full specification sheet detailing ingredients and allergen information. Specifications can be provided in the format required by each caterer, allowing them to be sent directly to catering teams or uploaded seamlessly to their preferred procurement or compliance portals.

Should a recipe or ingredient ever change, we immediately update the relevant specification sheets and notify affected catering teams before the revised product reaches their kitchens. This helps ensure our customers always have access to the most up-to-date allergen information.

In fact, many of our recipes are inherently free of the 14 major allergens, and we aim for this wherever possible during product development. By designing products with inclusivity in mind from the outset, we help caterers provide safe meal options for a wider range of consumers.

Full batch traceability underpins everything we do. We can trace every product back to its source ingredients and forward to the customer who received it. In the event of an allergen concern, this allows us to identify affected batches quickly, isolate them effectively and take immediate action where required.
